When Fabian and I first started dating, we both had our go-to "let me impress you and pretend like I really know how to cook" meals. And they worked like a charm. Fabian's was a random pasta dish with a bunch of meat, tomatoes, seasonings, blah blah blah. And mine was a random shrimp and rice dish with a bunch of peppers and onions and soy sauce. When we first made these dishes, the kitchen smelled delicious, the food tasted aaaamazing, and we both accomplished the sole goal that we set out to achieve: to get laid.

J/k. That part happened long before we started cooking for each other. We have no standards. :(

Anyway, impressed by our own creations, we decided to start expanding our cooking repertoire and test the limits of what else we could make that would not only taste edible, but actually pretty damn good. We'd go out to restaurants and try a new dish, or see something super delicious on TV, and think -- hey, maybe we can try that? And after hours of googling the perfect recipe for that sought after dish, or speaking to family and friends about how they made that particular dish -- we'd modify and combine all of the recipes we found into one special mr. potato-head-type recipe that made sense to our own unique taste buds. And voila! After a catastrophically dirty kitchen (and possibly a kitchen fire and/or setting off the smoke detector), we'd have a Fabo or Sibo masterpiece!

Now, full disclosure: Throughout our relationship -- the level of "healthy" in our meals has run the gamut. When we first started out, we made and ate alllllll types of crap. Loads of banana nut pancake breakfasts with homemade hash browns, grits, and thick cut bacon EVERY WEEKEND. Dinners overflowing with rice and pasta and bread, and maybe a little protein sprinkled in here and there. Deep fried hush puppies (because I had to show off my southern roots) and pan fried festival (because he had to show off his Jamaican roots). And a lot of "hey, let's make a dozen cupcakes [or a loaf of banana nut bread] [or a pan of bread pudding] for no reason other than we're fat asses and, you know what, let's eat it all in one sitting" moments.

Ahhhhh. Those were the days.

Then one day, 100 pounds and 20 inches later, we looked in the mirror, realized we were consistently wearing one-piece swimsuits and t-shirts to the beach/pool, and decided that we probably should never eat another meal ever again.

Or, at the very least, commit to going....*dun dun dun!*.....LOW-CARB.

Now because Fabian is a big meat-lover (hehe), going low-carb/high-protein for him has never been that big of a deal. Meanwhile, as someone who used to keep an emergency stash of gummi bears in the top drawer of her night stand (TRUE STORY), and who never once met a potato she didn't want to marry (ALSO TRUE)--the idea of going low-carb has always made me have minor panic attacks. However, somehow, some way -- we've been able to find theeee most delicious ways of staying low carb without me having to stab Fabian in his sleep.

So this blog will be dedicated to sharing all of the amazing recipes that we've made over the years -- the healthy, low-carb recipes that help you with your ability to walk around shirtless, and the "well he already put a ring on it, he's not going anywhere, so i'm letting myself go" recipes that allow you to indulge your juicier booty side. Either way, we promise that it will taste good and will be easy enough to make for all of the "basics" out there.

We hope you try some of these and enjoy them (or at the very least, not get sick and/or die).
